Featured Recipe

Butternut Squash Spinach Salad 

This recipe is easy, fun, and filling 

~Roasted Butternut Squash (lightly coated with olive oil, salt, cinnamon and chili powder) - Roast for 30-45 min - Allow time to cool

~ Make a Balsamic Vignette (see recipe page)

~ Toss Spanish and chickpeas with dressing

~ Add chopped pecans, pomegranate seeds, diced cucumber, sliced avocado - give the salad a slight mix

~Add your butternut squash to the top and I love to add feta cheese and a splash of salsa!
